Nakagawa ginsan nakiri 165mm is a blade designed for cutting vegetables. The nakiri often reminds us of a chopper, but unlike the latter, the extremely fine geometry of the nakiri allows excellent penetration into even the densest vegetables.

History and curiosity

Nagakawa-san apprenticed with legendary master blacksmith Kenichi Shiraki who created the Shiraki Hamono brand, until becoming its leader when Shiraki-san retired. In 2005 Nakagawa-san changed the brand name to Nakagawa Hamono.

Nakagawa-san is today one of the renowned blacksmiths when it comes to high-end artisanal cutlery. He works with all types of steel, but where you can appreciate all his mastery of heat treatments is with Ginsan, Aogami #1 and Shirogami #1 steels.

This blade that we offer is forged in Ginsan steel, a steel that combines the best of both worlds: oxidizable and stainless steel. The high carbon content in this alloy allows it to reach a very fine edge and stay sharp for a long time. On the other hand, the chromium content in the alloy is high enough to make this blade resistant to oxidation.

The handle

The handle is handcrafted with a yellow cedar burl, brass spacer and resin bolster.
