Yu Kurosaki Senko SG2 Gyuto 240mm, is a forged powder steel chef’s knife. This blade therefore has the advantages of high carbon steels (razor sharp, very high wire retention, durability over time) and those of stainless steels (resistance to oxidation and ease of maintenance).
History and curiosity
The knives of the Japanese master blacksmith Yu Kurosaki are highly appreciated by lovers of handcrafted knives. Kurosaki-san has a workshop in the heart of the Takefu Knife Village, a mecca for artisanal knife production. This place brings together a large number of artisan blacksmiths whose methods derive directly from ancestral know-how. Being gathered in the same place allows them to share their techniques, while preserving the Japanese heritage, which is also recognized internationally.
This craftsman has been working since the 2000s, and he was a student of renowned master blacksmiths. He is particularly recognized for the original work he does on his blades, whose hammerings are all more beautiful than the other. Kurosaki-san is the youngest blacksmith to be certified as a master blacksmith by the Japanese authorities.
This 24 cm chef’s knife, or gyuto in Japanese, is part of the Senko series. This knife has a San Mai blade, this structure consists of an SG2 steel core, a “powder” steel of new metallurgical technology with a hardness of approximately 63 HRC and two layers of stainless steel on the sides.
The handle
The handle of this blade is made with a stabilized and dyed birch burl, bog oak spacers and brass.
