Yu Kurosaki Senko SG2 Gyuto 210mm is forged from powder steel. This steel has qualities that allow the knife to perform at a very high level, to meet the needs of the most demanding cooks.
Yu Kurosaki Japanese knives are highly appreciated by lovers of handcrafted knives. Kurosaki-san has a workshop in the heart of the Takefu Knife Village, a mecca for artisanal knife production. Indeed, the area brings together a large number of artisan blacksmiths whose methods derive directly from ancestral know-how. Being gathered in the same place allows them to share their techniques, while preserving the Japanese heritage, which is also recognized internationally.
Kurosaki has been officiating since the 2000s, and he was a student of renowned master blacksmiths. He is particularly recognized for the original work he does on his blades, whose hammerings are all more beautiful than the other. Kurosaki-san is the youngest blacksmith to be certified as a master blacksmith by the Japanese authorities.
This 21cm chef’s knife, or gyuto in Japanese, is part of the Senko series.
It has a San Maï blade, that is to say that it is built from 3 layers of steel and the San Maï structure is typically Japanese. This structure consists of a core of SG2 steel, a new metallurgical technology “powder” steel with a hardness of approximately 63 HRC and two layers of stainless steel on the sidewalls.
The handle is handcrafted in stabilized and tinted mango wood, spacers in coppery resin, bolster and pommel in stabilized and tinted black oak burl.
