Description
Hatsukokoro Saihyo SG2 gyuto 210mm
The gyuto is an extremely versatile blade, equivalent to a chef’s knife.
History and curiosity
Since its establishment in 2013, H&K Co. Ltd has sought out the best products Japan has to offer. In 2019, we developed our original brand “Hatsukokoro”. The word Hatsukokoro comes from the Japanese proverb “don’t forget your original intention”.
Due to the contracts stipulated between the brand and the blacksmiths, sometimes the identity of certain blacksmiths remains a mystery, which makes things a little more exciting.
The blade
This new line of knives from Hatsukokoro is called Saihyo, which translates to diamond dust. The Saihyo line is made in Seki, Japan. Seki-city is a world-renowned knife-making powerhouse that hosts the Seki City Cutlery Festival and attracts knife enthusiasts from around the world. These knives are sharpened with a slight convexity and super fineness, which easily puts them in the laser category. The use of SG2 for a cutting steel makes these knives highly sought after for their ease of use and long life. The suminagashi damascus coating draws you in with highly intricate details, making these knives a spectacular choice for a gift.
The handle
Handcrafted, the handle is made of Juma snakeskin, brass spacer and faux ivory ferrule.
