Musashi Aogami Deba 180mm is a traditional Japanese blade designed for lifting fish and also for deboning poultry. The Deba has a fairly thick and heavy blade. Thanks to its geometry, you can break edges or cartilage without risking damaging the blade.
History and curiosity
Musashi Hamono is a company that brings together several blacksmiths from different places such as Miki, Tosa, Sakai among others. Their goal is to highlight the incredible work of lesser known craftsmen.
This blade was made by a craftsman in the town of Tosa. Traditionally the Deba is a single bevel blade, so its use is reserved for either left-handed or right-handed people. This one has been exceptionally forged with a double bevel, so its use is ambidextrous.
Musashi Aogami Deba 180mm is forged from #2 aogami steel, Japanese blue steel. This steel reaches a hardness of 62-63 HRC, which gives the blade outstanding edge retention and ease of sharpening.
The handle
The handle of this knife was made entirely with a single piece of wood, we used an essence of yellow cedar burl.
