Miyazaki Damascus ATS-34 Tsubaki 245mm.
The Tsubaki is the “signature” blade type of master smith Miyazaki. Also known as a Hakata, this type of knife reminds us of a kiritsuke, but the curve of its edge is more pronounced and its blade has a higher height towards the tip.
History and curiosity
Haruki Miyazaki-san is a 35-year-old blacksmith from the Goto Islands in Nagasaki Prefecture. He decided to become a blacksmith and apprentice under Ooba-san in Fukuoka.
After 5 years of apprenticeship, he learned all the basic blacksmithing skills and returned to his native island, where he opened his own workshop. He continued to travel throughout Japan, learning and mastering new skills from other blacksmiths and knifemakers on his travels.
Miyazaki works alone in his small forge, doing everything by hand. All his knives are hand rolled, heat treated with pine charcoal and water tempered.
The blade
Made with a san mai structure, with an ATS34 steel core and a stainless steel coating. The latter, rolled by hand to obtain a pretty damascus pattern. Due to its composition, ATS34 steel is a very strong steel, easy to maintain and a great wire retention. However, for its characteristics it is more used as an outdoor knife rather than a kitchen knife.
The handle
Finally, the handle is made with a dyed and stabilized maple burl, resin spacer and mother-of-pearl inlays.
