Yoshimi Kato Kurouchi damascus AS gyuto 210mm is the must-have knife in every cook’s bag. This blade is the equivalent of a western chef’s knife, so a very versatile blade, which lends itself to many uses in the kitchen.
History and curiosity
In the last decade Yoshimi Kato has become a world famous blacksmith, thanks to his mastery and expertise in the forging of exceptional kitchen knives. He learned from his father Hiroshi Kato, one of the pillars of Japanese cutlery. In 2017 he took over the family business when his father retired. Kato-san creates his blades in Takefu Knife Village in Fukui Prefecture.
This blade is part of the kurouchi Damascus series forged with an Aogami Super steel core. This steel with a hardness of 64 +-1 HRC achieves a razor sharp edge, which stays sharp for a long time and is also super easy to sharpen. It’s called SUPER for a reason. The core is covered with damask steel, the layers of which can be appreciated on the lower part of the blade, while the upper part has a kurouchi (as-forged) finish.
The handle
The handle is handcrafted with a blackash burl, brass, red jasper stone and black onyx stone.
