Takeshi Saji Diamond Damascus SG2 gyuto 270mm is the equivalent of a Western chef’s knife. This type of blade was traditionally used for cutting pieces of meat. Hence its name: gyu = cow; to= sword, today its use is very versatile and versatile.

Takeshi Saji is one of the pillars of Japanese cutlery, with his 83 years of age including 56 years of experience in forging, he is a pioneer in the creation of unusual Damascus steel patterns. He has announced his retirement, so his creations will be increasingly difficult to find.
Saji-san with other pillars like Katsushige Anryu, Hiroshi Kato among others, in the year 2000 created the Takefu Knife Village (Takefu Knife Village). Its goal was to bring together the blacksmiths of the area so that they could work together and share their knowledge, and also to inspire new generations to continue this tradition.
Today, many world-famous blacksmiths work side by side in the village of Takefu. For example Yu Kurosaki, Yoshimi Kato, Takumi Ikeda and even Takeshi Saji among others.
This blade is part of the Diamond Damascus series, the particularity of this series is the fact of having a damask pattern in relief that we can see under our fingers. This is possible thanks to the use of several steels with different hardness. The blade core is made of SG2 steel, a powder steel with incredible mechanical properties and a hardness of 63-64 HRC (Rockwell Hardness “C”).
