Miyazaki AS Damascus gyuto 210mm is a very versatile blade, considered the Japanese version of a chef’s knife. Due to its higher blade, this gyuto offers us greater comfort when using it.
History and curiosity
Haruki Miyazaki-san is a 35-year-old blacksmith from the Goto Islands in Nagasaki Prefecture. He decided to become a blacksmith and apprentice under Ooba-san in Fukuoka.
After 5 years of apprenticeship, he learned all the basic blacksmithing skills and returned to his native island, where he opened his own workshop. He continued to travel throughout Japan, learning and mastering new skills from other blacksmiths and knifemakers on his travels.
Miyazaki works alone in his small forge, doing everything by hand. All his knives are hand laminated, heat treated with pine charcoal and water tempered.
The blade
Made with san mai structure, with super aogami steel core and soft iron coating. The cladding is hand laminated to obtain a pretty damascus pattern. Due to its water tempering, aogami super steel has a hardness of 64-65 HRC, which allows this blade to be razor sharp, having the ability to hold the edge for a very long time.
The handle
Finally, the handle is made with a chittum burl, triple brass spacer and blond buffalo horn ferrule.
